• Thirsty owl adding Saratoga tasting room

SARATOGA SPRINGS — Wine-centric festivals and dinners are commonplace in the Spa City. Now, tasting rooms are beginning to take their place as more and more New York wineries add tasting rooms.

Swedish Hill another Finger Lakes winery, opened a tasting room at 379 Broadway last month. It was its second offsite tasting room. The other is in Lake Placid village.

The next one on the drawing boards here will be Thirsty Owl Wine Company, which purchased 184 South Broadway, former home of the Kimberly Inn. It will be the Caygua Lake facility’s first off-site tasting room.

Thirsty Owl co-owner Ted Cupp told local media he envisions a July 1, 2012, opening after extensive renovations and permitting. He said he plans to dedicate the lower level of the building to a retail and restaurant business and will lease out the second floor as residences.
